🛒 Ingredients
- 2 eggs
- 120g soft light brown sugar
- 120g self raising flour
- 2 tbsp olive oil
- one lemon
Step-by-Step Instructions
Prepare Your Workspace
Wash your hands and gather all your ingredients and equipment. This is a great time to get your child to read the ingredients list!
Whisk the egg and sugar together
Good for gross motor development. But it can be quite a challenge, if it gets too much take it in turns.
Sieve in the self raising flour
Using the sieve is super for two reasons – hand eye coordination and wrist strengthening.
Add the olive oil
Count in the 2 tablespoons.
Grate in the lemon zest
Being careful to keep fingers away from sharp edges, grate in the zest of the lemon.
Fold the ingredients using the dessert spoon
As gently as possible mix. Don’t worry if it is a bit wild at this point!
Put mixture into cupcake cases
This is really good for hand eye coordination. It is also good to talk about fractions. “Fill the cases 1/3 full.”
Bake for 15 – 20 minutes
Be careful of hot ovens.
💡 Tips for Parents
- Let your child do as much as they can independently, even if it’s messy
- If your child finds the whisking tricky, take it in turns or move to an electric whisk.
- These muffins freezes well — make a double batch and save some for later.
